Full disclosure – this meal takes about 5 minutes to make only in case you have cooked quinoa laying in your fridge. 🙂 if not, it takes a tiny bit more time, but nothing to fret about.Â
If you didn’t get to meal prep on Sunday because you were too busy chilling, Mediterranean-inspired quinoa salad is perfect for the days when you don’t know what to bring for lunch for work tomorrow. At this point, you also too lazy to cook something up. You don’t really feel like turning on the oven and doing the dishes, and you just want to kick it. At the same time, you really don’t want to spend mad dough on a takeout from down the block from your job.
Enter, Mediterranean Quinoa Salad. Â

Prep Time:Â 5 minutes (if quinoa previously cooked)
Ingredients:Â
- 2 cups of cooked quinoa
- 1 cup of chickpeasÂ
- 1/2 of diced cucumber
- 1/3 of diced onion
- 1/2 of diced tomato
- 1/2 of diced onionÂ
- 2 TBSP of feta cheeseÂ
- 1 tsp of olive oilÂ
- juice of 1/2 lemonÂ
- salt and pepper to tasteÂ
